Wholesale gelato ice cream manufacturers

When sourcing gelato, you must prioritize fat content (typically 4-9%) and overrun (air incorporation), which should be significantly lower than industrial ice cream (around 20-30%) to ensure a dense, creamy texture. Verify the shelf life, which for commercial wholesale gelato is usually 12 to 18 months when stored at -18°C or lower. Additionally, check for natural stabilizers like guar gum or carob bean gum rather than synthetic alternatives to maintain a premium brand positioning.

As a dairy-based food product, gelato must adhere to strict safety standards. Ensure the supplier is HACCP (Hazard Analysis and Critical Control Points) certified and possesses ISO 22000 (Food Safety Management). For specific markets, you may require FDA registration (USA), EFSA compliance (EU), or Halal/Kosher certifications. Always request a Certificate of Analysis (COA) for every batch to verify the absence of pathogens like Listeria and Salmonella.

Request samples to be shipped via specialized cold-chain express. Upon arrival, perform a sensory evaluation: the texture should be smooth without ice crystals, and the flavor should be intense and immediate due to the lower serving temperature. Conduct a melt-down test to observe stability; high-quality gelato should melt evenly into a thick liquid, not separate into water and foam. Check the ingredient list for real fruit purees and high-quality nuts rather than artificial flavorings.

For B2B wholesale, gelato is typically packed in 5-liter stainless steel or food-grade plastic tubs (pozzetti). Ensure the packaging is hermetically sealed to prevent freezer burn and cross-contamination. For retail-ready formats, verify that the labeling complies with the destination country's laws, including bilingual ingredient lists, allergen warnings (milk, nuts, soy), and nutritional facts panels.

The biggest risk is cold-chain rupture. A temperature fluctuation above -15°C can cause irreversible texture damage (heat shock). To mitigate this, use data loggers in every shipment to monitor temperature history. Another risk is customs clearance delays for dairy products; ensure all Health Certificates are pre-approved by your local customs broker before the ship departs.

For frozen goods, CIF (Cost, Insurance, and Freight) or DAP (Delivered at Place) are often preferred for new buyers, but FOB (Free on Board) gives you more control over the specialized reefer (refrigerated container) settings. Negotiate for Reefer Container Monitoring services and ensure the contract specifies a maximum allowable temperature variance during transit.

Use secure payment methods such as Letters of Credit (L/C) or Escrow services provided by reputable platforms like Made-in-China.com. This ensures that funds are only released when the supplier provides proof of loading into a functioning reefer container and submits the required veterinary/health documentation.

You must book a Reefer Container (20ft or 40ft RF) with a set point of -20°C to -25°C. Ensure the supplier performs a Pre-Trip Inspection (PTI) on the container to guarantee the cooling unit is functional. For smaller volumes, consider LCL (Less than Container Load) frozen consolidation, but verify that the other cargo in the container does not have strong odors that could be absorbed by the dairy.
