Wholesale sea scallop manufacturers

When evaluating sea scallops, the most critical factor is the 'Dry vs. Wet' classification. Dry scallops are natural, untreated, and caramelize better, commanding a premium price. Wet scallops are treated with Sodium Tripolyphosphate (STP) to retain moisture, which increases weight but affects flavor and texture. You should also verify the 'U-count' (e.g., U-10, U-15), which indicates the number of scallops per pound; lower numbers signify larger, more expensive scallops.

To ensure market access and consumer safety, suppliers must provide HACCP (Hazard Analysis and Critical Control Point) certification. For high-end retail or eco-conscious markets, look for MSC (Marine Stewardship Council) or BAP (Best Aquaculture Practices) labels. Additionally, a Health Certificate and a Certificate of Origin issued by the exporting country's competent authority are essential for customs clearance.

IQF (Individually Quick Frozen) is the industry standard for high-end food service because it allows for portion control and reduces waste, as users can defrost only what is needed. Block frozen is typically more cost-effective for large-scale processing but requires defrosting the entire unit at once. Ensure the glazing percentage (ice coating) is clearly stated in the contract to avoid paying for excess water weight; a glazing of 5-10% is standard for protection.

Sea scallops must be maintained at a constant temperature of -18°C (0°F) or lower throughout the cold chain. Professional suppliers should provide data logger records for the duration of the transit. The typical shelf life for frozen scallops is 18 to 24 months, but for optimal quality, sourcing stock with a production date within the last 6 months is recommended.

The biggest risks are cold chain rupture and species substitution. To mitigate these, use third-party inspection services (like SGS or Intertek) to conduct a Pre-Shipment Inspection (PSI) to verify weight, count, and temperature. Always source from verified gold suppliers on Made-in-China.com who have a proven track record in frozen seafood exports.

Seafood prices fluctuate based on seasonal harvests and fuel costs. It is advisable to negotiate long-term volume contracts to lock in pricing, but include a price adjustment clause linked to market indices. For payment, use Letter of Credit (L/C) or Escrow services for the first few transactions to ensure the goods meet the specified quality before funds are fully released.

Shipping must be handled via Reefer Containers (Refrigerated Containers) with active temperature monitoring. Ensure the freight forwarder is experienced in perishable logistics and can handle Priority Customs Clearance. For documentation, ensure the Bill of Lading, Commercial Invoice, and Packing List perfectly match the Health Certificates to avoid costly delays at the port of entry, which could lead to spoilage.

Request the supplier's Export Registration Number and verify it against the official database of the destination country's food inspection agency (e.g., FDA in the US, TRACES in the EU). On Made-in-China.com, prioritize suppliers with Audited Supplier reports, which provide independent verification of their manufacturing facilities and legal standing.
