Frozen tuna manufacturers

When sourcing frozen tuna, the most critical factor is the Freezing Method. Prioritize suppliers using Ultra-Low Temperature (ULT) freezing (-60°C), as this preserves the cellular structure, color (myoglobin), and sashimi-grade quality. Additionally, verify the Grade (AAA, AA, or A), which typically refers to the color stability and fat content. For B2B buyers, ensuring a low drip loss percentage (typically <5%) upon thawing is essential for maintaining weight and texture integrity.

To ensure compliance and consumer safety, suppliers must hold HACCP (Hazard Analysis and Critical Control Points) certification. For entry into major markets, look for ISO 22000 or BRCGS (British Retail Consortium Global Standard). Furthermore, to meet sustainability requirements and avoid Illegal, Unreported, and Unregulated (IUU) fishing issues, ensure the supplier provides MSC (Marine Stewardship Council) certification and a valid Catch Certificate.

Frozen tuna is generally offered in three forms: Loin, Saku (block), and Steaks. Saku is the most expensive due to precise cutting for sashimi and sushi, requiring high-skill processing. Loins are more cost-effective for large-scale catering or further processing. Ensure the CO (Carbon Monoxide) treatment status is clarified; while CO-treated tuna maintains a bright red color, it is banned in the EU and Canada, so you must choose non-CO (natural color) products for those regions.

The agreement should explicitly state the Histamine levels (must be <50 ppm) to prevent scombroid poisoning. Specify the Net Weight vs. Glazing percentage; standard glazing is 5-10% to prevent freezer burn. Also, define the species clearly (e.g., Yellowfin/Thunnus albacares vs. Bigeye/Thunnus obesus) as they have different market values and fat profiles.

The biggest risk is Temperature Fluctuation during transshipment. A break in the cold chain can lead to histamine buildup and protein denaturation. It is highly recommended to use GPS temperature data loggers inside the container. Ensure the shipping line provides a Pre-Trip Inspection (PTI) report for the reefer container to guarantee the cooling unit is functional before loading.

Focus on Audited Suppliers who have undergone on-site inspections by third-party agencies like SGS or Intertek. Check their Export Experience specifically to your target country, as customs requirements for seafood vary significantly. Request a Video Audit of their cold storage facilities and processing floor to ensure they follow GMP (Good Manufacturing Practices).

Beyond the standard Invoice and Packing List, you must secure a Health Certificate issued by the exporting country's government authority, a Certificate of Origin, and a Catch Certificate. For certain species, a CITES permit may be required. Failure to provide these will lead to immediate seizure or destruction of the cargo by customs.

Since tuna is a commodity, prices fluctuate based on seasonal catches. Negotiate based on Volume Tiers and consider Long-term Contracts to lock in prices during peak seasons. If you are a new buyer, suggest a Letter of Credit (L/C) or Escrow payment terms to secure the transaction, and always insist on a Pre-shipment Inspection (PSI) by a third party to verify weight and quality grades.
